Feeling your sweet tooth taking over your thoughts?! Then this is just the recipe for you! This 5 ingredient, 10 simple -step Torte will relieve your chocolatey cravings and leave you so satisfied! I mean who doesn’t need a little sweetness in their life?!
Ingredients:
200g ginger biscuits
100g dairy-free butter
400ml dairy-free double cream
300g dairy-free dark chocolate
1tsp vanilla extract
A couple handfuls of fresh or frozen mixed berries
A loose-bottomed 20cm flan tin
Non-stick baking paper
Method:
For the base:
1. Line the bottom of a loose-bottomed 20 cm flan tin with non-stick baking paper.
2. In a food processor, blitz your ginger biscuits until they look like crumbs and transfer the crumbs to a mixing bowl.
3. Melt your dairy-free butter in the microwave for 30 seconds or until fully melted. Add the butter to the same mixing bowl as the crumbs and mix together until combined.
4. Add the mixture to the flan dish, on top of some pre-cut, non-stick baking paper and place your base mixture into the fridge whilst preparing the chocolate ganache.
For the ganache (top layer):
5. Heat the dairy-free, double cream in a medium saucepan until completely warmed through..
6. Whilst it’s heating up, chop the chocolate into small chunks so its easier to melt.
7. Once bubbles start to show, remove from the heat, add the chocolate chunks and the vanilla extract. Stir until fully melted and combined.
8. Take your base out of the fridge and pour your ganache mixture over the biscuit base.
9. Place in the fridge for about 1.5 hours or until solid.
10. Once solid, take out your torte from the fridge and add some mixed berries to decorate the top. (the bitterness of the berries complements the sweetness of the torte really well). And serve!
