Fancy something spiced, sweet and perfect for winter? then this easy tray-bake cake for you!

(10 simple steps)

ginger traybake cakeIngredients:

(For the cake)
450g organic, all purpose flour
1 1/4 tsp baking powder
1 1/4 tsp bicarbonate of soda (baking soda)
5 tsp ground ginger
3 tsp mixed spice
2 balls of stem ginger (diced)
75g caster sugar
1/2 tsp salt
160ml sunflower oil
170g golden syrup
170g treacle
360ml boiling water

(For the icing on top)
75g icing sugar (powdered sugar)
1 tsp water

Method:

  1. preheat the oven to 180C/gas mark 4
  2. grease a 23/33 cm rectangular cake tin and line with parchment
  3. whisk together the organic flour, baking powder, bicarbonate of soda, mixed spice, ginger, caster sugar and salt in a large mixing bowl.
  4. add the golden syrup, treacle, sunflower oil and boiling water to the same bowl and whisk until a smooth batter.
  5. once smooth, add your diced stem ginger to the bowl and mix it in.
  6. pour the batter into your baking tin and bake for around 25-30 minutes.
    (i like it slightly gooey in the middle so 25 minutes is just enough but if thats not your preference then 30 minutes will be perfect!).
  7. leave to cool in the tin for another 25 minutes and then carefully flip the cake onto a drying rack.
  8. to make the icing for the top, place your icing sugar into a bowl and add, little by little, the water until a smooth paste is formed.
  9. get a spoon and use zig-zag lines over the cake to coat the top of the cake with the icing.
  10. cut into squares and serve!

 

Recipe tips:

  • If you do not have icing powder, simply blend 75g caster sugar in a blender and your icing powder will be made!
